Souffle Omelette with Jam
Quantity for one person
1 large free-range egg
Knob of Butter (not spread)
1 teaspoon of Castor Sugar
1-2 teaspoons of great Strawberry Jam
Icing Sugar for dusting
I think you need a proper omelette pan for the best results – I’ve had my pan for over 25 years and the inside is wiped and oiled after use but never washed.
Crack egg and put white in medium size bowl.
The yolk goes in a smaller bowl with Castor sugar – beat together
Whisk white until firm, put 1 teaspoon of white into the yolk and mix well.
Put pan on stove when hot add a nob of butter.
Fold yolk into the egg white.
When butter is hot, but not brown, add egg mix and allow to cool.
Set grill on high.
Flash omelette under grill just to set top.
Fold omelette in half and slide onto a warm plate, dust with icing sugar.
Serve with a delicious jam
