Coronation Chicken

NOTES
We used raw chicken which we poached in stock then used when cool, not cold but ready cooked chicken could be used.
Allow Coronation Chicken to stand for at least 2 hours to absorb flavours. Vary ingredients according to taste.

Ingredients:

4 chicken breast fillets
2 chicken boneless thighs without skin
1 Small Red Onion
1 teaspoon Tomato Puree
½ pint Chicken Stock or ½ a stock cub in ½ pint of water
2 tablespoonsful Sultanas – soaked in a little warm water to plump up
1 Crisp Dessert Apple
Lime juice
3 tablespoonsful Tiptree Coronation Mayonnaise
2 tablespoons Tiptree Mayonnaise
1 tablespoon Mango Chutney
Pomegranate – to garnish
Coriander – to garnish preferred

Method

If using raw chicken – set oven at 175 degrees. Place chicken in shallow oven proof dish with onion cut into 4 pieces
Mix tomato puree with chicken stock and pour over chicken, cover with foil and cook in oven for 35-40 minutes, check it is cooked then set aside to cool. Best used when cool not cold.
Remove sultans from water; core apple and cut into chunks, squeeze lime juice over apple
Mix Tiptree Coronation Mayonnaise, Mayonnaise and Mango Chutney
Cut chicken into chunks and put into a bowl add sultanas, apple and mayonnaise – stir carefully
Cover and set aside to absorb flavours for at least 2 hours
Put on serving plate and garnish with pomegranate seeds and fresh coriander.
Serve with Coronation Pasta

Addition place Crudité of carrot, pepper and cucumber with mayonnaise on the table.
