Tropical Mincemeat Tarts
This recipe idea is a festive but light tart that can be served as a dessert or for afternoon tea.
You can make pastry but I saved time and found some excellent ready-made tartlets.
4 Sweet pastry tartlets – 3 ½ inches approx
3 tablespoons good quality Mincemeat
4 rings of tinned Pineapple in juice
4 halves of tinned Apricots in juice
Knob of butter – optional
1 Fresh Pomegranate
Chilled fresh Double Cream – to serve
Drain pineapple and apricots on kitchen paper.
Set oven 200 degrees.
Spread 2 teaspoons of Mincemeat into pastry tart right to the edge.
Put a ring of pineapple on mincemeat, top with apricot.
Place in oven for 7-8 minutes until mincemeat heated.
Remove seeds from pomegranate and put on kitchen paper to drain.
Gently wipe butter over apricot to give a slight glaze – optional.
Sprinkle pomegranate seeds over the tart.
Serve immediately with chilled double cream.
