Black Currant Custard
NOTES
A fruity custard with a pool of black currents in the base of the dish
Ingredients:
4 teaspoons Tiptree Black Currant Conserve
4 Eggs – large – free range if possible
1½ pints Full Fat Milk
1 heaped tablespoon Castor Sugar
Nutmeg
Butter
4 x 3” ramekin dishes

Method
Set oven at 180c or 160c Fan oven.
Lightly butter ramekins
Put 2 teaspoons of Black Currant Conserve in each ramekin and spread evenly
Heat milk – do not boil
Beat together eggs and sugar
Pour milk onto eggs whisking all the time
Strain custard through sieve into ramekins
Top with freshly grated nutmeg
Place ramekins in a bain-marie (or a large dish of warm water)
Bake for about 23-25 minutes depending on oven – until just wobbly
Allow to cool but just as good cold.
