Savoury Strawberry Tart
NOTES
This is an illusion it looks like a strawberry and cream but is made with a variety of meats and vegetables, whatever is in the cupboard and is fun to make – this is what we used;
Ingredients:
- 320g Puff Pastry – ready rolled
- 3 tablespoons Tiptree Tomato Ketchup
- 100g approx. Cheddar Cheese – grated
- 25g Parmesan Cheese – grated
- ½ Large Red Pepper – cut into long strips
- 80g box Pomegranate Seeds
- 2 Spring Onions – split along length
- 1 Banana Shallot – finely sliced
- 2 mini sweetcorn – split down length
- 100g Bacon Lardons
- 4 slices Salami
- 8 or 10 mini Mozzarella balls
- 4 Baby tomatoes – cut in half
- 2 Radishes – sliced
- Black Olives
- Olive Oil

Method
Set oven at 200 fan
Prepare vegetables and think about finished design
Lay pastry on a strong baking sheet, trim edge if too long
Lightly cut into top part of pastry, making an inner square about ½ inch from the edge to frame vegetables
Lightly prick the inner part of the “frame”
Spread the inner frame with Tiptree Tomato Ketchup and cover with grated cheeses
Place red pepper strip to make the outline of a strawberry
Fill “strawberry” with pomegranate seeds
Arrange remaining vegetables into flowers or shapes across the pastry
Drizzle with olive oil
Bake for 13-15 minutes – serve with salad
