Dew
and mushrooms seem to go together but rather
than searching for them in the fields I’ve
found some lovely flat field type mushrooms
in the shops.
I
expect it’s not the recommended healthy option
but I peel them and cut them across the centre
and then cut into fan shaped pieces. Heat
good quality butter (not spreadable) in a
saucepan (sometimes adding a dash of olive
oil) and cook mushrooms until they start to
collapse, add freshly ground black pepper
and sea salt. Serve on a hot toasted crumpet
or with a slice of crusty brown bread – garnish
with some tasty green leaves.
